400 grit edge establishment — 15° for Japanese blades, 20° for Western, set freehand on the stone.

Progressive 1000–3000 grit stones bring the bevel into alignment and remove the burr.

6000–8000 grit mirror finish, then a final strop on leather. You'll feel the difference immediately.
